Vegetarian quiche is perfect for a weekend breakfast or brunch. This vegetarian broccoli quiche recipe goes quite well with a whole wheat crust. Ingredients: • 3 eggs • 1 cup cooked broccoli, chopped • 1 1/2 cups low-fat grated Swiss cheese • 8 ounces evaporated skim milk • 2 cloves garlic, minced • 1 onion, chopped • 1 tsp salt • 1/2 tsp black pepper • 1 tomato, sliced thin • 1/4 cup Parmesan cheese • 1 pre-made whole wheat pastry crust (recipe link below) Preparation: Preheat oven to 350 degrees. Whip eggs with wire whisk; add broccoli, shredded Swiss cheese, evaporated milk, garlic, onion, salt and pepper; stir until blended. Pour into prepared whole wheat pastry crust. Slice tomato and place on top of quiche mixture; sprinkle with Parmesan Cheese. Bake for 35 to 45 minutes or until quiche tests done in center. Allow to cool before serving. Potato and Green Onion Frittata
Nutritional yeast provides a tangy flavor to this tofu-based vegan frittata. Much like a quiche, this dish is perfect for breakfast or brunch. Try sprinkling some shredded cheese (dairy or soy) on top for even more flavor. Prep Time: 20 minutes Cook Time: 50 minutes Total Time: 70 minutes Ingredients: • 1/4 cup olive oil • 1 onion, chopped • 4 green onions, chopped (separate the greens from the bottom) • 4 cloves garlic, minced • 2 medium potatoes, thinly sliced • 1 tsp salt • 1/2 tsp pepper, divided • 1 12 oz package firm tofu • 1/4 cup soy sauce • 4 tbsp nutritional yeast • cheese (optional) Preparation: Preheat oven to 325 degrees. In a large frying pan, sautee the onions, garlic, and bottoms of the green onions in olive oil for 2-3 minutes. Add potatoes, salt and pepper, and sautee for 10-15 minutes, stirring occasionally until potatoes are golden brown. Blend tofu, soy sauce, and nutritional yeast in a food processor or blender until well mixed. Mixture will be somewhat thick. Add green onions and potatoes and pour into a greased pie pan. Cook 45-50 minutes, until top is firm and cooked all the way through. Sprinkle the top with cheese if desired, and enjoy! Tomato and Basil Quiche
Original Recipe Yield 1 (9 inch) pie Ingredients: • 1 tablespoon olive oil • 1 onion, sliced • 2 tomatoes, peeled and sliced • 2 tablespoons all-purpose flour • 2 teaspoons dried basil • 3 eggs, beaten • 1/2 cup milk • salt and pepper to taste • 1 (9 inch) unbaked deep dish pie crust • 1 1/2 cups shredded Colby-Monterey Jack cheese, divided Directions 1. Preheat oven to 400 degrees F (200 degrees C). Bake pie shell in preheated oven for 8 minutes. 2. Meanwhile, heat olive oil in a large skillet over medium heat. Sautee onion until soft; remove from skillet. Sprinkle tomato slices with flour and basil, then sautee 1 minute on each side. In a small bowl, whisk together eggs and milk. Season with salt and pepper. 3. Spread 1 cup shredded cheese in the bottom of pie crust. Layer onions over cheese, and top with tomatoes. Cover with egg mixture. Sprinkle top with remaining 1/2 cup shredded cheese. 4. Bake in preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake for 15 to 20 minutes or until filling is puffed and golden brown. Serve warm.
